Prune and Marmalade Tart

(Serves: 4-6)

2 tablespoons orange marmalade
1 x pre-cooked 18cm-20cm tart base
2 tablespoons almond meal
400g can pitted whole prunes, well drained
6 scoops Sustagen Instant Pudding Vanilla
240mL water

(Preparation time: 15 minutes.)

  1. Spread half of the marmalade into the base of the tart shell. Sprinkle with almond meal and arrange prunes to cover.
  2. Whisk together the Sustagen Instant Pudding and water in a bowl.
  3. Spoon Sustagen over the prunes and leave to set for 2 minutes.
  4. Drizzle remaining marmalade over tart and refrigerate for 2 hours before serving.

Other berries or a mixture of berries can be used.

Storage:
Cover with plastic film and keep refrigerated for 2-3 days.

Freeze:
Not suitable.
