¼ cup short grain rice, such as Arborio
6 scoops Sustagen Instant Pudding Vanilla
240mL water
Ground nutmeg or cinnamon, for dusting

(Preparation time: 5 minutes. Cooking time: 10 minutes)
- Cook rice following packet directions. Drain and cool.
- Whisk together Sustagen Instant Pudding and water in a bowl, leave to set for 2 minutes.
- Stir in cooked rice and spoon into serving dishes.
- Dust with nutmeg or cinnamon and serve.

Add ¼ teaspoon finely grated lemon or orange zest for citrus zing.
Storage:
Cover with plastic film and keep refrigerated for 2-3 days.
