Served hot or cold, Zucchini Slice is perfect for dining in or taking on a picnic to share with friends.

5 eggs, separated
¾ cup milk
1 cup self raising flour
5 scoops Sustagen Hospital Formula Vanilla
250g grated zucchini, liquid squeezed out
2 spring onions, finely sliced
2 rashers, rindless bacon, diced
1 cup grated cheddar cheese

(Preparation time: 15 minutes. Cooking time: 30 minutes)
- Preheat oven to 180°C (360°F) conventional/170°C (340°F) fan forced. Grease and line a 28cm x 18cm baking dish.
- Beat the egg yolks and milk in a large bowl until combined. Add the flour and Sustagen Hospital Formula and beat until smooth.
- Stir in zucchini, onion, bacon and cheese until well combined. Whisk egg whites until stiff peaks form and fold into mixture.
- Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
helpful tips
For something different try replacing half the zucchini with grated carrot or pumpkin.
Storage:
Cover with plastic film and keep refrigerated for 2-3 days.
Freeze:
Freeze individual portions in freezer bags for up to one month.
